Description
Minced fat from around the groin of The Duke of Berkshire® is cooked for several hours whilst being constantly stirred. After cooking, the melted fat is sieved and cooled. During cooling, it is stirred frequently. At the right moment, when it is not too soft and not too hard, the salt is added and the pots are filled. The result is a homogeneous white unctuous mass. The use of Duke of Berkshire groin fat makes this ‘boerensmout’ deliciously creamy.
