Farmer's malt with crackling
The Duke of Berkshire®
Kind of meat
Minced fat from around the groin of The Duke of Berkshire® is cooked for several hours whilst being constantly stirred. After cooking, the melted fat is sieved and cooled. It is regularly stirred during cooling. At the right moment, when it is not too soft and not too hard, the salt and the delicious crackling is added and the pots are filled. The result is a homogeneous white unctuous mass. The use of Duke of Berkshire® groin fat makes this ‘boerensmout’ deliciously creamy.
